SPICE-RUBBED TENDERLOIN
This recipe can be used for Pork or Venison tenderloin and is easily doubled or tripled to feed more hungry hunters. Also, you may substitute any of Doc Kendrick's wild game rubs. 1 tsp Doc Kendrick Pork Rub 2 tsp vegetable oil 1 tenderloin (1 pound), Pork or Venison
Preheat broiler or grill. In a small cup, combine Doc Kendrick Pork Rub with vegetable oil. Use to rub on tenderloin. Place the tenderloin on rack in broiler, or on grill. Broil/grill tenderloin, turning once, until meat thermometer inserted in center reaches 155° F, 15 to 20 minutes. Place meat on a cutting board and let rest for 5 minutes to set juices for easier slicing. Cut into 1/4 inch slices on a diagonal.
Makes 2 main-dish servings.
WILD GAME MARINADE
Marinate elk steak in soy sauce-water combination (enough to cover meat) for 30-45 minutes, add 1/2 cup of zesty Italian dressing for an additional 15 mintues. Remove from marinade and rub in either Doc’s Elk Steak Rub or Doc’s Garlic Game Rub, grill to taste. Enjoy! This recipe is very effective with venison as well.
